    Job Description

    The Omni Houston Hotel is set to reopen with completely reimagined restaurant concepts. Birdies Café & Bar has a brand new concept, and we are looking for a Restaurant Manager to lead the concept to successful implementation.


    About Birdies


    The vision of the new restaurant is to move away from being perceived as primarily an outlet that serves breakfast to the in house guest.  The new restaurant will spotlight a multi - purpose bar that will provide a much needed missing component to the past restaurant.  The Bar will serve Coffee and Espresso Drinks in the morning and through the day, up until the late afternoon.  The Coffee and Espresso bar will provide a much needed visual design element that was void with the past restaurant, which caused the restaurant to be somewhat hidden and in addition lacked energy. This bar will create activity and much needed life in a prime area off the lobby. A fine selection of top rated wines will be offered along with small plates and shareable appetizers.


    The restaurant space is Modern Texas.  The food concept is also modern Texas. The menu is locally sourced driven and very approachable.   At lunch time, specialty salads will take center stage along with the best of the best Texas comfort foods, from hamburgers made with ground sirloin and topped with Charred Roasted Hatch Chile Peppers, to Fish Tacos. At dinner time, the features include fresh table side fare as well as a 40oz Long Bone Prime Ribeye for sharing to line caught fish of the day. Emphasis will be on both small plates/sharing and signature Texas dishes.  The dishes will be simplistic and not overly composed. Various traditional and newer global seasonings will heighten the dishes but not overpower them.  Service is highly personal, interactive and relaxed.  The staff is engaging and comfortable in conversing with the diners.  Music will play an important role throughout the day and into the evening.

    Guest Experience

    • Consistently ensure maximum guest satisfaction.
    • Become familiar with clients so that there is constant recognition of all repeat guests.
    • Handle all complaints to the guests' satisfaction.
    • Monitor timing of guest experience and table turnovers.
    • Adjust all lights and music appropriately for each meal period.
    • Monitor and critique the quality and consistency of the food product.


    Leadership and Training

    • Pre-meal meetings conducted with service staff on a daily basis.
    • Supervision of floor during restaurant operation.
    • Ensure all side-work is completed to maintain a clean environment.
    • Train service personnel to follow rehearsed service scenarios.
    • Complete scheduling and maintain productivity of service staff.


    Restaurant Operations

    • Contribute to the profitability of the restaurant through cost control effectiveness.
    • Perform weekly, monthly and quarterly forecasting.
    • Expedite table turnover and table resetting.
    • Be familiar with all food and beverage-related procedures and equipment and be able to assist all functions when needed.
    • During service, constantly inspect tabletops, side-stations and tray stands for consistency.


    Sales and Marketing

    • Implement sales promotions, marketing, and merchandising programs.
    • Constantly perform positive up-selling techniques with service staff.
    • Manage and update Open Table with Reservations reviewed on a daily basis.
    • Manage special events.


    Safety and Standards

    • Know emergency procedures (including CPR) and work to prevent accidents.
    • Ensure proper function of all service equipment.
    • Enter all maintenance deficiencies in Synergy and follow up
    • Be familiar with and enforce all policies related to liquor liability laws. Specifically: Dramshop Theory - Prohibiting sale of liquor to intoxicated guests.
    • Prohibit sale of liquor to minors.
    • Maintain the physical atmosphere and cleanliness of the restaurant.
    • Ensure staff’s uniforms and appearance meet specifications.
    • Know and adhere to all Omni policies, procedures, and standards.


    • 2+ years of experience in Floor Manager or Restaurant Management role.
    • Hotel experience a plus.
    • Three meal dining experience (breakfast, lunch, and dinner) a plus.
    • Understanding of Food and Beverage financials including cost and par controls is preferred.
    • General knowledge of Microsoft Word, Excel, and PowerPoint.
    • Must have a strong attention to detail as well as strong customer service skills.
    • Must be Food Handler and TABC certified.
    • Must be able to work a flexible schedule including weekends and holidays.
    • Innovative ideas to enhance the guest experience in an upscale dining environment.
